Spiced Pumpkin Bread with Pecans
Makes 1 large loaf
Ingredients
6 tablespoons unsalted butter plus additional for pan at room temperature
3/4 cup granulated sugar
3/4 cup brown sugar
4 large eggs
2 cups pumpkin puree
1 cup whole milk
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon sea salt
1 tablespoon ground nutmeg
1 tablespoon ground cinnamon
1 tablespoon ground cloves
2 teaspoons grated orange zest
1 cup pecans chopped
Instructions
Preheat the oven to 350°F. Butter a large loaf pan and set aside.
In a medium bowl, combine the flour, baking soda, baking powder, salt, nutmeg, cinnamon, and ground cloves. Set aside.
In a standing mixer with the paddle attachment, beat together the butter and sugars until combined. Add the eggs and mix for 1 minute. Add the pumpkin puree and milk. Mix for an additional 2 minutes. Add the flour mixture to the bowl and mix until combined. Stir in the orange zest and the pecans.
Transfer the batter to the loaf pan and place in the oven. Bake for 50-55 minutes. Remove from the oven and let cool for 10 minutes. Remove the bread from the pan and serve.
